Grilled Baby Potatoes with Lemon Herb Dressing Ingredients
- 1.5 pounds baby white potatoes
- Olive oil
- Salt
- Pepper
Lemon Herb Dressing
- 1 cup fresh cilantro leaves
- 1 cup fresh Italian parsley leaves
- 2 whole green onions, roughly chopped
- 2 cloves garlic, minced
- 6 tablespoons fresh lemon juice, about 2 lemons
- 6 tablespoons olive oil
- 1 teaspoon salt
- 1/4 teaspoon black pepper
Grilled Baby Potatoes with Lemon Herb Dressing Directions
- Place the potatoes in a large pot and cover with cold water. Place over high heat and bring to a boil. Cook potatoes until fork tender but with a bit of give in the middle, about 15-20 minutes. Let potatoes cool for about 10 minutes, then cut them in half. Brush each side with a small amount of olive oil and season with salt and pepper.
