What You Need 

First, you'll need to gather all the necessary supplies. The centerpiece of your meal will be a whole bone-in ham. You'll also need some kind of smoker or grill with indirect heat (charcoal or wood is preferred) and wood chips (maple and apple are great choices). Other items on hand include an instant-read thermometer, aluminum foil, and a glaze of your choice. 

Preparing the Ham 

Once everything is assembled and ready to go, it's time to prepare the ham. Start by trimming excess fat outside the ham and removing any remaining skin. Next, score the surface of the ham in diagonal lines about one inch apart so that it can absorb more flavor when it cooks. Finally, rub some oil into each cut and season generously with a mix of spices such as garlic powder, onion powder, black pepper, paprika, cumin—whatever suits your fancy! 

Smoking Your Ham 

When your ham is prepped and seasoned to perfection, it's time to start smoking! Set up your smoker or grill according to its instructions for indirect heat, and fill the water pan halfway with warm water. Once your fire has been lit and reached a temperature between 225°F - 250°F (107°C - 121°C), place your prepped ham directly on the grate. If desired, throw some wood chips onto your fire for added flavor. Smoke for 1 hour per pound until an internal temperature of 155°F (68°C) is reached. Make sure to regularly check the temperature throughout this process using an instant-read thermometer. 

Add a Delicious Glaze to Your Smoked Ham 

Once your ham has reached the desired temperature, it's time to glaze. Prepare your glaze according to its instructions and brush it generously over the surface of your ham. Place back into the smoker or grill for 20-30 minutes until the glaze is caramelized and slightly crisp outside. Remove from heat, and rest for 5-10 minutes before slicing and serving your hungry guests!
