Grilled Zucchini with Balsamic Glaze, Basil, and Feta Ingredients
- 2 large zucchini
- cooking spray (or olive or avocado oil)
- salt and pepper
- 1 Tbsp. chopped basil
- ⅓ cup crumbled feta cheese
Balsamic Glaze
- ½ cup
- 3 Tbsp. (can use brown sugar instead)
Grilled Zucchini with Balsamic Glaze, Basil, and Feta Directions
- Bring the grill up to medium heat. Lightly oil the grill grates with a grill brush to keep the zucchini from sticking.
- Spray zucchini slices with cooking spray on each side (or rub with oil if preferred). Sprinkle lightly with salt and pepper.
- While the grill is coming to temperature, start preparing the glaze by heating the vinegar and sugar in a small pan over medium heat, whisking to dissolve the sugar. Bring to a simmer, then reduce the heat to low.
- Let simmer, stirring occasionally, until the vinegar has reduced by about half and the sauce coats a spoon (about 10 minutes). It will continue to thicken as it cools, so don't overdo it!
- Remove the glaze from the stovetop and let it cool for 2-3 minutes while finishing the zucchini (no more than 5 minutes, or the sauce may get too thick).
- While the sauce is reducing, lay the zucchini slices flat on the grill and cook, covered, for about 3-5 minutes. Flip and cook for about 3-4 minutes on the other side (exact cooking time will depend on the temperature of the grill, placement, and thickness of the zucchini).
