Few things satisfy like a perfectly grilled ribeye, seared over an open flame and dripping with bold, beefy flavor. Pair it with cowboy butter—a rich, herb-infused sauce with a kick of heat—and every bite is pure indulgence. The balance of charred crust, juicy interior, and buttery finish makes this steak a go-to for those who appreciate deep, layered taste.

Grilling over high heat locks in moisture while creating the ideal crust. A generous rest after cooking allows juices to be redistributed, ensuring tenderness in every slice. Cowboy butter takes things further, melting into the steak with garlic, citrus, and a touch of spice for a punch of richness.

This method works best with thick-cut ribeyes, letting the marbling render into something intensely flavorful. Whether cooked over charcoal or a powerful gas flame, achieving the perfect sear elevates the experience. Pair with roasted vegetables or a crisp salad, and it’s an unbeatable meal for any occasion.

Serves 4

Grilled Ribeye with Cowboy Butter Ingredients

  • 2-3 Bone in Ribeyes
  • 2 tbsp Bourbon Prime Rub
  • Canola Oil as needed

Cowboy Butter

  • 1 cup Melted Butter
  • 1 medium Lemon juiced
  • 2 tbsp Minced Garlic
  • 1.5 tbsp Dijon Mustard
  • 1 tbsp Chopped Parsley
  • 1 tbsp Chopped Chives
  • 1 tsp Black Pepper
  • ½ tsp Cayenne Powder
  • Kosher Salt to taste

Grilled Ribeye with Cowboy Butter Directions

  1. Begin by lathering your steaks with oil and generously season with salt, pepper, and garlic powder. Set in the fridge for 30-40 minutes.
  2. Preheat your grill for two-zone indirect cooking at 250F. Add wood chips or chunks for added smoke flavor.
  3. Pull your steaks out, place them on the cool side of the grill, and cook until they are 120F internal (about 40-60 minutes). Halfway through the cook, make sure to flip your steaks over. Once the steaks are done, pull them off and let them rest for 10-12 minutes.
  4. After resting, kick the heat up too high (about 400F) and sear the steaks over the flames for 2 minutes per side. Once done, pull them off and let them cool for 2-3 minutes.
  5. As the steaks cool, add melted butter to a bowl and stir in the rest of the Cowboy Butter ingredients. Set to the side.
  6. Serve your steaks with the butter drizzled over the top, or use it as a dip on the side. Enjoy!
