- 3 tablespoons oil
- LOTS of DIY BBQ Seasoning Mix

- 1 cup rice vinegar (unseasoned)
- 1 cup sugar
- 1 cup water
- 1/4 cup sambal oelek
- 1/4 cup chili garlic sauce
- 2 tablespoons corn starch
- 1/8 cup cold water
DIY BBQ Seasoning Mix
- 1/2 teaspoon garlic powder
- 1/4 teaspoon cumin
- 1/4 teaspoon cinnamon
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1 teaspoon onion powder
- 1/4 teaspoon cayenne
- 1 teaspoon paprika
- 1/3 cup brown sugar
- 1 teaspoon onion salt
Sweet Chili Chicken Leg Quarters Directions
- Preheat your grill to 350-400°.
- Brush the chicken with oil and then season with LOTS of seasoning rub. Use our homemade BBQ seasoning mix, or pick your favorite.
- Place skin-side up on the grill, and grill for 15-20 minutes. Flip and grill for an additional 10-20 minutes.
- When the chicken reaches about 150°, crank up the grill to high and continue grilling until the internal temperature is 165°.
- Slather on the sauce during the last 5 minutes for best results.
- Pull off the grill and let rest for 10 minutes before serving.
Sweet Chili Sauce
- In a medium saucepot, stir together the vinegar, sugar, 1 cup of water, sambal oelek, and chili garlic sauce.
- Cook over medium-low heat for 20 minutes or until the sugar is fully dissolved.
- Stir together the cornstarch and cold water to form a slurry.
- Whisk into the chili garlic sauce and bring to a simmer, stirring constantly, until it is thickened.
- Remove from heat and let cool to room temperature. Pour into a jar and store in the fridge.
