Grilled Scallops Ingredients
- ¼ cup extra-virgin olive oil, plus more for grill
- 1 tablespoon honey
- 2 tablespoons lemon juice (from 1 lemon)
- 2 garlic cloves, minced
- 2 teaspoons smoked paprika
- 1 teaspoon sea salt, plus more to taste
- 1 ¼ pounds large scallops
- Freshly cracked black pepper, to taste
- 2 tablespoons minced fresh flat parsley leaves
- Lemon wedges, for serving (optional)
Grilled Scallops Directions
- In a small bowl, combine the olive oil, honey, lemon juice, garlic, smoked paprika and salt.
- Place the scallops and the marinade in a large zip-top plastic bag, seal it shut, and refrigerate for 1 hour (see Note).
- Preheat the grill on medium-high. Brush the grates with olive oil.
- Remove the scallops from the marinade and allow any excess to drip off. Thread the scallops onto 6 skewers, dividing evenly.
- Place the skewered scallops on the grill and cook until opaque, 2-3 minutes each side.
- Transfer the scallops to a serving platter. Serve warm, garnished with black pepper and parsley, with lemon wedges alongside, if using.
Notes: If you are using wooden skewers, soak them in warm water for the hour that the scallops are marinating.
