Grilled Salmon with Mango Lime Salsa Ingredients
- 1 24 oz Atlantic Salmon
- 1 Cedar Plank
- 2 Mangos
- 2 Avocados
- 1 Red onion
- 1 Red pepper
- 2 Limes
- 1 Bunch fresh cilantro (about 1 ¼ cups loosely chopped)
- Sea salt

Make the Salsa
- Chop mangos, avocados, and cilantro. Dice red onion and red pepper.
- Combine all ingredients in a large bowl, and add the juice of two large limes.
- Toss gently to mix well, and salt lightly to taste if desired.
- Salsa can be made up to 3 hours ahead of time, if refrigerated and kept tightly covered.
Grill the Salmon
- Preheat grill to 425°
- Place fully thawed salmon on the cedar plank
- Cook for 12-15 minutes - the core temperature should reach 158°
- Garnish the planked salmon generously with the mango salsa.
